Ingredients
- 1 large sweet potato
- 8 cherry tomatoes quartered
- 1 avocado sliced
- 2 eggs
- 2 slices smoked bacon
- 1 Spring onion sliced
Instructions
- Preheat the oven to 180 oC
- Clean the sweet potato and slice into 4 1/2cm slices
- Place the potato slices on a baking sheet
- Bake in the oven for 25 minutes or until cooked
- Poach the eggs in boiling water until the whites cooked but the yolks runny, about 3 minutes
- Fry the smoked bacon until crisp
- Place the sweet potato slices on a plate and top with the tomatoes, avocado, spring onion, poached eggs and smoked bacon
