Serves 2


  • 250g cooked rice
  • 1 onion
  • 2 garlic cloves, minced
  • sprinkle of chilli flakes
  • 200g prawns, shells removed
  • 50g diced chorizo
  • 200g chopped tomatoes
  • handful of fresh basil
  • salt and pepper for seasoning


  1. Heat a drizzle of olive oil in a large saucepan over a medium heat
  2. Add in the garlic, onion and chilli flakes, saute for a couple of minutes
  3. Add in the chorizo and prawns and cook for about 3 minutes
  4. Stir in the cooked rice, chopped tomatoes, basil and season with salt and pepper
  5. Cook for about 5 minutes
