Meal Prep Chicken Curry

  • 1 tablespoon olive oil
  • 3 chicken breasts cut into small chunks
  • 1 onion diced
  • 1 pepper sliced
  • 2 garlic cloves minced
  • 3 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1/4 teaspoon chilli flakes
  • 2 x 400g can of chopped tomatoes
  • 200 ml chicken stock
  • 80 ml dairy free cream
  • salt and pepper for seasoning


  • Place the olive oil in a large pan over a medium heat
  • Add in the garlic, garam masala, turmeric and chilli flakes
  • Cook for a couple of minutes
  • Add in the chicken and cook for 5 minutes
  • Stir in the onions and peppers and saute for 5 minutes
  • Pour in the chicken stock and chopped tomatoes
  • Bring to the boil and simmer for 20 minutes
  • Stir in the cream and season to taste
  • Divide between four bowls and serve with rice
