  • 110 grams dairy free spread
  • 50 grams caster sugar
  • 1 egg
  • 75 grams light brown sugar
  • 170 grams gluten free plain flour
  • 1 teaspoon vanilla extract
  • 120 grams dairy free chocolate chips
  • 24 mini marshmallows


  • Preheat the oven to 180 oC and line two baking sheets with parchment paper
  • Cream together the dairy free spread, caster sugar and brown sugar until light and fluffy
  • Mix in the egg and gluten free flour
  • Stir through the dairy free chocolate chips and marshmallows
  • Divide the mixture into 12 balls of cookie dough
  • Place 6 cookies on each tray and flatten slightly
  • Bake for 12 minutes
  • Allow to cool on the baking sheet for 10 minutes and then transfer to a wire cooling tray
