Ingredients
- 150 g rice
- 1 tbsp olive oil
- 150 g prawns peeled and prepped
- 2 garlic cloves minced
- 1 small onion diced
- 1 pepper diced
- 1 egg beaten
- 1 mango chopped into small chunks
- 1 tsp sriracha sauce
- 1 tbsp gluten free soy sauce
- 1 tsp fish sauce
- salt and pepper for seasoning
- fresh coriander for garnish
Instructions
- Cook the rice per the instructions on the packet and set aside
- Add the olive oil to a shallow pan over a medium heat
- Add the onion, peppers and garlic
- Saute for 7 minutes
- Add in the prawns and cook for a couple of minutes
- Pour in the beaten egg and push around the pan for a couple of minutes until it scrambles
- Stir in the cooked rice, mango, sriracha sauce, gluten free soy sauce, fish sauce and seasoning
- Cook for a couple of minutes
- Serve garnished with fresh coriander
