Mango Prawn Fried Rice

  • 150 g rice
  • 1 tbsp olive oil
  • 150 g prawns peeled and prepped
  • 2 garlic cloves minced
  • 1 small onion diced
  • 1 pepper diced
  • 1 egg beaten
  • 1 mango chopped into small chunks
  • 1 tsp sriracha sauce
  • 1 tbsp gluten free soy sauce
  • 1 tsp fish sauce
  • salt and pepper for seasoning
  • fresh coriander for garnish


  • Cook the rice per the instructions on the packet and set aside
  • Add the olive oil to a shallow pan over a medium heat
  • Add the onion, peppers and garlic
  • Saute for 7 minutes
  • Add in the prawns and cook for a couple of minutes
  • Pour in the beaten egg and push around the pan for a couple of minutes until it scrambles
  • Stir in the cooked rice, mango, sriracha sauce, gluten free soy sauce, fish sauce and seasoning
  • Cook for a couple of minutes
  • Serve garnished with fresh coriander
