Mango Chicken Salad Bowls

For the chicken:

  • 2 chicken breasts diced
  • 50 ml fresh orange juice
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 garlic clove minced
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • salt and pepper for seasoning

For the mango salsa:

  • 1 mango peeled and sliced
  • 1/2 small onion finely sliced
  • 1 garlic clove minced
  • 2 tbsps lime juice
  • 1 tbsp fresh coriander torn

To serve:

  • 2 handfuls spinach
  • 8 cherry tomatoes halved


  • Mix together the chicken, orange juice, olive oil, lime juice, garlic, oregano, smoked paprika and seasoning
  • Set aside for 15 minutes to marinade
  • Pour into a shallow pan over a medium heat and cook for 12 minute or until the chicken is cooked
  • Make the mango salsa by stirring together the mango, onion, garlic, lime juice and coriander
  • Allow the chicken to cool and toss together with the salsa, tomatoes and spinach
