  • 270 g basmati rice
  • 2 tbsps olive oil
  • 200 g mushrooms sliced
  • 300 g smoked pork sausage (double check it is gf) sliced
  • 1 onion diced
  • 1 red pepper diced
  • 1 green pepper diced
  • 2 garlic cloves minced
  • good pinch of chilli flakes
  • 2 tbsps gluten free soy sauce
  • 1 tsp thyme
  • 1 tsp smoked paprika
  • salt and pepper for seasoning


  • Cook the basmati rice according to the instructions on the packet and set aside
  • Add the olive oil into a large shallow pan over a medium heat
  • Saute the mushrooms, pork sausage, onion, peppers, garlic and chilli flakes for about 10 minutes
  • Stir in the cooked rice, gluten free soy sauce, thyme, smoked paprika and season to taste
  • Hea through for 5 minutes and serve
