Ingredients

For the salad:

  • 100 g gluten free pasta
  • 2 large handfuls of salad leaves
  • 1/4 cucumber sliced
  • 1/2 small red onion diced
  • 1 avocado sliced
  • 1/2 red pepper sliced
  • 10 cherry tomatoes halved

For the dressing:

  • 30 ml olive oil
  • 1 garlic clove minced
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp oregano
  • 1 tsp basil
  • Salt and pepper for seasoning

Instructions

  • Cook the pasta per the instructions on the packet
  • Rinse the pasta with cold water and set aside to cool
  • Mix the salad items and the pasta together in a large bowl
  • Whisk together all the ingredients for the dressing
  • Pour over the salad and toss gently
