Leftover Turkey Curry

Ingredients

  • 1 large onion diced
  • 1 tsp fresh ginger grated
  • 2 garlic cloves minced
  • 3 tbsps korma curry paste
  • 500 g cooked turkey diced
  • 150 ml chicken stock
  • 400 ml coconut milk
  • 50 g ground almonds
  • 2 tbsps fresh coriander
  • salt and pepper for seasoning

Instructions

  • Heat a drizzle of olive oil in a large shallow pan
  • Add the onion, garlic and ginger and saute for a couple of minutes
  • Add the chicken stock, korma paste, coconut milk and cooked turkey
  • Bring to the boil and simmer for 20 minutes
  • Stir in the ground almonds, coriander and season with salt and pepper
  • Serve with pilau rice
