Serves 2


  • 4 potatoes, peeled and diced
  • 1 small onion, diced
  • salt and pepper, for seasoning
  • 1 egg white, beaten
  • 1 tablespoon gluten free plain flour
  • 1 teaspoon oregano
  • 1 teaspoon chives


  1. Boil the potatoes for 15 minutes or until tender
  2. Place the potatoes in a bowl and mash until smooth
  3. Stir in the onion, seasoning, egg white, flour, oregano and chives
  4. Shape into four cakes
  5. Gently fry for a couple of minutes on each side until golden
  6. I served mine with spinach, bacon and poached eggs
