Serves 1-2
Ingredients
- 1 large potato, cut into cubes
- 1/2 small onion, diced
- 1/2 pepper, diced
- 2 slices smoked bacon, cut into stripes
- 1 garlic clove, minced
- 1/2 teaspoon paprika
- 1 tablespoon dairy free cheese
- 1 egg
- 1 tablespoon dairy free milk
- 1/2 teaspoon dried basil
- salt and pepper, for seasoning
- 1/2 avocado
- 1 spring onion, cut into slices
- 2 cherry tomatoes, quartered
- sprinkle of chilli flakes
Directions
- Bring a pan of salted water to the boil and add in the cubed potatoes
- Boil until tender, about 10 minutes
- Drain away the water
- Add the potatoes, a drizzle of olive oil, onion, pepper, garlic, bacon and paprika into shallow pan
- Cook over a medium heat for 10 minutes
- Stir in the dairy free cheese then transfer the potato mix to a serving bowl
- Whisk together the egg, dairy free milk, basil and seasoning
- Scramble the egg in a pan for a couple of minutes
- Top the potatoes with the scrambled egg, spring onion, tomatoes, avocado and a sprinkle of chilli flakes
