Chicken and Leek Pasta Bake

  • 2 leeks diced
  • 2 chicken breasts diced
  • 1 tbsp cornflour
  • 400 ml chicken stock
  • 250 ml dairy free cream
  • 275 g gluten free pasta
  • 2 tsps basil
  • salt and pepper for seasoning
  • 4 tbsps dairy free cheese grated


  • Cook the pasta according to the instructions on the packet and set aside
  • Heat some olive oil in a saucepan
  • Add chopped leak and cook for 2 minutes
  • Add the diced chicken, replace the lid and cook for 20 minutes stirring occasionally
  • Add the flour and stir until the chicken is coated
  • Add the stock and stir until thickened
  • Stir in the cream, seasoning and basil until bubbling then remove from the heat
  • Mix in the cooked pasta
  • Pour into a casserole dish and top with the dairy free cheese
  • Heat under the grill for a couple of minutes
