For the blondies:

  • 110 g dairy free spread melted
  • 150 g caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 125 g gluten free plain flour

For the cinnamon swirl:

  • 30 g dairy free spread melted
  • 50 g brown sugar
  • 2 tsps cinnamon


  • Preheat the oven to 180 oC
  • Line an 8" square cake tin with baking parchment
  • Stir the melted dairy free spread and brown sugar together
  • Whisk in the egg and vailla extract
  • Fold in the flour and pour into the cake tin
  • Make the cinnamon swirl by stirring together the melted dairy free spread, brown sugar and cinnamon
  • Swirl through the cake batter
  • Bake in the oven for 30 minutes
  • Allow to cool and then cut into bars
