Ingredients
- 170 g caster sugar
- 2 eggs
- 175 ml dairy free milk
- 60 g dairy free spread melted
- 250 g Christmas mincemeat
- 300 g gluten free self raising flour
Instructions
- Preheat the oven to 170 oC
- Grease and line a loaf tin
- Whisk together the caster sugar, eggs, dairy free milk and melted dairy free spread
- Stir in the gluten free flour and mincemeat
- Spoon into the loaf tin
- Bake for 50 minutes
- Remove from the loaf tin and allow to cool
- Dust with icing sugar before serving
