Tomato, Chorizo and Avocado Canapes

  • 2 gluten free paninis I used Schar
  • 2 tablespoons finely chopped chorizo
  • 1 to mato
  • 1 avocado
  • salt and pepper for seasoning
  • 1 teaspoon lime juice
  • 1 garlic clove minced
  • fresh coriander or basil


  • Cut the panini rolls into slices
  • Preheat the oven to 180 oC
  • Place the bread slices on a baking sheet and bake for 10 minutes or until crisp
  • Set aside to cool
  • Fry the chorizo until crisp
  • Set aside on a piece of kitchen towel
  • Slice the tomato then cut the slices in half
  • Mash the avocado and stir in the lime juice, garlic and season with salt and pepper
  • Spread the avocado on the bread and top with the chorizo and tomato
  • Sprinkle with some fresh coriander or basil
