Serves 6


  • 3 eggs
  • 100g caster sugar
  • 50g dairy free spread, melted
  • 100g gluten free self raising flour
  • 1 tablespoon cocoa powder
  • 1 tablespoon peanut butter
  • 1 tablespoon chopped peanuts


  1. Preheat the oven to 18o 0C
  2. Line a six hole muffin tin with paper cases
  3. Whisk together the eggs and sugar until foamy
  4. Pour in the melted dairy free spread and whisk until well combined
  5. Stir in the flour and cocoa powder
  6. Divide the mixture between the muffin tins
  7. Place a blob of peanut butter and a sprinkle of peanuts on top of each muffin
  8. Sprinkle on a little extra sugar
  9. Bake in the oven for 20 minutes
  10. Allow to cool before serving
