Ingredients

  • 2 chicken breasts diced
  • 55 ml tamari
  • 2 tbsps brown sugar
  • 2 tbsps cornstarch
  • 1 tsp ground ginger
  • 2 tbsps olive oil
  • 1 onion diced
  • 2 tomatoes quartered
  • 1 pepper diced

Instructions

  • Whisk together the tamari, brown sugar, cornstarch, ground ginger and pour over the diced chicken
  • If you have time, leave to marinade in the fridge for a couple of hours or overnight
  • Heat the olive oil in a large shallow pan over a medium to high heat
  • Add in the chicken with the marinade sauce and saute for 5 minutes
  • Add in the onion, pepper and tomatoes and cook for another 5 minutes or until the chicken is cooked through
  • Season to taste and then serve witth boiled rice
