Ingredients

  • 2 tbsps tamari
  • 2 tbsps fish sauce
  • 3 tsps brown sugar
  • 2 garlic cloves minced
  • 4 tsps cornflour
  • 1 tsp ground ginger
  • 2 tsps curry powder
  • 60 g peanut butter
  • 6 tbsps water
  • 200 g gluten free noodles
  • 1 tbsp olive oil
  • 1 large chicken breast diced
  • 1 pepper diced
  • 1 onion diced
  • 100 g mushrooms sliced

Instructions

  • Cook the noodles per the instructions on the packet and set aside
  • To make the satay sauce whisk together the tamari, fish sauce, brown sugar, cornflour, minced garlic, ginger, curry powder and peanut butter and set aside
  • Add the olive oil to a large shallow pan over a medium heat
  • Add in the chicken, onion, peppers and mushroom
  • Saute for 7 minutes
  • Add in the noodles and pour over the satay sauce
  • Stir fry for another three minutes and season to taste
  • I served mine topped with some fresh coriander and crushed peanuts
