Gluten and Dairy Free Chicken Pasta Soup

  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 3 tbsps tomato purée
  • Pinch of chilli flakes
  • 400 g can of chopped tomatoes
  • 900 ml chicken stock
  • 170 g gluten free pasta
  • 2 chicken breasts cooked and diced
  • 150 g dairy free cheese grated
  • 2 tsps oregano
  • Salt and pepper for seasoning


  • Add the olive oil into a large pan over a medium heat
  • Add in the onion and garlic and sauté for 5 minutes
  • Stir in the tomato purée and chilli flakes
  • Add the chopped tomatoes, chicken stock and pasta
  • Simmer for 10 minutes or until the pasta is cooked
  • Stir in the cubed cooked chicken, dairy free cheese, oregano and seasoning
  • Cook for a couple of minutes and then serve
