Gluten and Dairy Free Chicken Fricasse

  • 50 g dairy free spread
  • 30 g gluten free plain flour
  • 500 g chicken breast cut into thirds
  • 4 slices smoked bacon chopped
  • 1 onion chopped
  • 100 g mushrooms chopped
  • 100 ml white wine (or extra chicken stock)
  • 400 ml chicken stock
  • 1 garlic clove minced
  • 1 tsp thyme
  • Salt and pepper for seasoning


  • Add a drizzle of olive oil to a large shallow pan over a medium heat
  • Saut√© the chicken, onion, mushroom, garlic and bacon for 10 minutes
  • In a smaller pan melt the dairy free spread then whisk in the flour
  • Stir in the wine and stock and cook for 5 minutes stirring continuously
  • Pour the sauce into the pan with the chicken
  • Add in the thyme and seasoning
  • Cook on a low heat for 25 minutes
  • Serve with gluten free crusty bread or crispy potatoes
