Ingredients

  • 1 chicken breast, cubed
  • 1 onion, finely diced
  • 1 red pepper, finely sliced
  • 1 garlic clove, minced
  • 300ml passatta
  • 2 heaped teaspoons fajita spice mix
  • 1 teaspoon oregano
  • 150g gluten free pasta, cooked per instructions on the packet
  • salt and pepper for seasoning
  • handful of dairy free cheese, grated

Method

  1. Heat a drizzle of olive oil in a large shallow pan
  2. Add in the chicken, onion, pepper and garlic
  3. Saute for 10 minutes
  4. Sprinkle in the fajita spice mix and oregano and cook for another couple of minutes
  5. Pour in the passatta and allow to simmer for 5 minutes
  6. Season to taste with salt and pepper, you can also mix in more fajita powder
  7. Stir through the pasta
  8. Pop into a casserole dish and top with the grated cheese
