Serves 2
Ingredients
- 1 chicken breast, cubed
- 1 onion, finely diced
- 1 red pepper, finely sliced
- 1 garlic clove, minced
- 300ml passatta
- 2 heaped teaspoons fajita spice mix
- 1 teaspoon oregano
- 150g gluten free pasta, cooked per instructions on the packet
- salt and pepper for seasoning
- handful of dairy free cheese, grated
Method
- Heat a drizzle of olive oil in a large shallow pan
- Add in the chicken, onion, pepper and garlic
- Saute for 10 minutes
- Sprinkle in the fajita spice mix and oregano and cook for another couple of minutes
- Pour in the passatta and allow to simmer for 5 minutes
- Season to taste with salt and pepper, you can also mix in more fajita powder
- Stir through the pasta
- Pop into a casserole dish and top with the grated cheese
