Serves 2


For the waffles:

  • 1 egg
  • 125ml dairy free milk
  • 20g dairy free spread, melted
  • 70g gluten free plain flour
  • 2 tablespoons grated dairy free cheese, I used Violife
  • salt and pepper for seasoning

For the toppings:

  • 1 avocado
  • 1 teaspoon lime juice
  • sprinkle of chilli flakes
  • salt and pepper for seasoning
  • 2 eggs


  1. Beat together the egg, dairy free spread and milk
  2. Whisk in the flour, grated cheese and seasoning
  3. Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
  4. Alternatively you can use this mix to make savoury pancakes
  5. Mash the avocado and stir in the lime juice, chilli and seasoning
  6. Fry the eggs for a couple of minutes – I like mine crisp on the outside with a soft yolk
  7. Serve the cheese waffles topped with the avocado and fried egg
