Ingredients
- 1 gluten free pitta bread
- 6 plum tomatoes quartered
- 1//2 cucumber sliced
- 1/2 small red onion diced
- 40 g dairy free cheddar diced
- 1 tbsp olive oil
- 2 tbsps apple cider vinegar
- 2 large handfuls of rocket
Instructions
- Preheat the oven to 180 oC
- Tear the pitta into bite sized chunks
- Place on a baking sheet and bake in the oven for 15 minutes or until crisp and golden
- Allow to cool
- Combine the pitta, tomatoes, cucumber, onion, cheddar and rocket
- Whisk together the olive oil and apple cider vinegar
- Drizzle over the salad and serve
