Serves 2


  • 4 lambs chops
  • 2 teaspoons Cajun seasoning
  • 150g rice cooked and cooled to room temperature
  • juice and zest of one lime
  • 2 spring onions, diced
  • 1 red pepper, diced
  • 1/2 cucumber, diced
  • salt and pepper for seasoning


  1. Coat the lamb chops in the Cajun seasoning
  2. Heat a drizzle of olive oil in a shallow pan over a medium to high heat
  3. Add in the chops and cook for about 4 minutes on each side
  4. Make up the rice salad by stirring together the rice, lime juice, zest, spring onions, red pepper, cucumber and season with salt and pepper to taste
  5. Serve with the lamb chops
