  • 4 slices gluten free bread
  • 1 tablespoon peanut butter, crunchy or smooth
  • 1 banana, sliced
  • 1 egg
  • 30ml dairy free milk
  • drizzle of olive oil


  1. Spread one side of each of the slices of bread with peanut butter
  2. Place slices of banana on two of the peanut butter bread and use the remaining two slices to sandwich together
  3. In a wide bowl whisk together the eggs and milk
  4. Heat a drizzle of olive oil in a shallow pan over a medium heat
  5. Dip the sandwiches in the egg mix
  6. Fry for a couple of minutes on each side
  7. Serve immediately
