Ingredients
- 200g dairy free custard, I used Alpro
- 25og dairy free spread
- 250g caster sugar
- 4 eggs
- 2 teaspoons cinnamon
- 300g gluten free self raising flour
- 50g ground almonds
- 1 teaspoon baking powder
- 80g sultanas
- 2 medium sized eating apples, peeled, cored and diced
Directions
- Preheat the oven to 180 oC
- Grease an 8″ by 8″ cake tin
- Place 150g of the custard into a bowl with the dairy free spread and caster sugar
- Whisk in the eggs one at a time
- Stir in the cinnamon, flour, ground almonds, baking powder, sultanas and chopped apples
- Pour into the cake tin
- Place dollops of the remaining caster on top of the cake and swirl with a knife
- Bake for 45 minutes
- Allow to cool and then dust with icing sugar and cut into squares
