• 200g dairy free custard, I used Alpro
  • 25og dairy free spread
  • 250g caster sugar
  • 4 eggs
  • 2 teaspoons cinnamon
  • 300g gluten free self raising flour
  • 50g ground almonds
  • 1 teaspoon baking powder
  • 80g sultanas
  • 2 medium sized eating apples, peeled, cored and diced


  1. Preheat the oven to 180 oC
  2. Grease an 8″ by 8″ cake tin
  3. Place 150g of the custard into a bowl with the dairy free spread and caster sugar
  4. Whisk in the eggs one at a time
  5. Stir in the cinnamon, flour, ground almonds, baking powder, sultanas and chopped apples
  6. Pour into the cake tin
  7. Place dollops of the remaining caster on top of the cake and swirl with a knife
  8. Bake for 45 minutes
  9. Allow to cool and then dust with icing sugar and cut into squares
