Apple and Ginger Bars

Ingredients

For the cake:

  • 125 g gluten free self raising flour
  • 1/2 tsp mixed spice
  • 1 tsp ground ginger
  • 90 g caster sugar
  • 40 g brown sugar
  • 1 egg
  • 70 ml vegetable oil
  • 120 g apple sauce

For the apples:

  • 1 eating apple peeled and diced
  • 1/2 tsp ground cinnamon
  • 15 g dairy free spread
  • 1 tsp brown sugar

Instructions

  • Preheat the oven to 180 oC
  • Line a 6" by 6" square tray bake tin with foil
  • Place all the ingredients for the apples into a shallow pan and saute over a medium heat for 5 minutes then set aside to cool
  • Mix together the egg, vegetable oil and apple sauce
  • Stir in the gluten free flour, mixed spice, ginger and sugar
  • Mix in the apples
  • Pour into the traybake tin
  • Bake in the oven for 35 minutes
  • Allow to cool for 10 minutes then remove from the tin
  • Cool completely and then cut into 9 squares
