Ingredients

  • 290 g gluten free self raising flour
  • 150 g brown sugar
  • 1 tsp ground cinnamon
  • 235 ml dairy free milk
  • 1 tbsp lemon juice
  • 65 g apple sauce
  • 1 egg
  • 60 g chopped apple
  • 60 g grated courgette

Instructions

  • Preheat the oven to 180 oC
  • Grease and line a 900g loaf tin
  • Stir together the dairy free milk and lemon juice
  • Leave for 10 minutes to thicken
  • Place the gluten free flour, brown sugar and cinnamon in a large bowl
  • Stir in the milk mixture, applesauce, egg, chopped apple and grated courgette
  • Pour into the loaf tin
  • Bake for 35 minutes
