Apple and Courgette Loaf

Ingredients
- 290 g gluten free self raising flour
- 150 g brown sugar
- 1 tsp ground cinnamon
- 235 ml dairy free milk
- 1 tbsp lemon juice
- 65 g apple sauce
- 1 egg
- 60 g chopped apple
- 60 g grated courgette
Instructions
- Preheat the oven to 180 oC
- Grease and line a 900g loaf tin
- Stir together the dairy free milk and lemon juice
- Leave for 10 minutes to thicken
- Place the gluten free flour, brown sugar and cinnamon in a large bowl
- Stir in the milk mixture, applesauce, egg, chopped apple and grated courgette
- Pour into the loaf tin
- Bake for 35 minutes
