  • 120 g gluten free self raising flour
  • zest one lemon
  • zest of one orange
  • 105 g brown sugar
  • 75 ml vegetable oil
  • 2 eggs
  • 1 medium sized carrot grated


  • Preheat the oven to 180 oC
  • Line a muffin tin with 6 paper cases
  • Mix together the lemon zest, orange zest, brown sugar, vegetable oil, eggs and grated carrot
  • Gently fold in the gluten free flour
  • Divide the mixture between 6 muffin cases
  • Bake for 25 minutes
  • Allow to cool before enjoying
