  • 4 egg whites
  • 230g caster sugar
  • 1 teaspoon cornflour
  • 1 teaspoon cinnamon
  • 20g gluten and dairy free cocoa powder


  1. Preheat the oven to 150 oC
  2. Whisk the egg whites until fluffy peaks form
  3. Add in the caster sugar, cornflour, cinnamon and cocoa powder
  4. Beat until well combined
  5. Pipe large circles of the mix onto a baking sheet lined with baking parchment
  6. Bake in the centre of the oven for 20 minutes
  7. Remove from the oven and allow to cool before serving
