Hello everyone, it’s time to share a new dinner recipe and I’ve gone with my Gluten and Dairy Free Creamy Chicken and Leek Pasta Bake. I’m a big fan of chicken and leek as a savoury flavour. I wanted to make this into a pasta dish which I originally envisaged would be made with spaghetti. I love pasta but of all the gluten free pastas available I find spaghetti the hardest to cook. It can often stick together if you don’t look after it while cooking. I ended up making this as a past bake dish instead.
I used gluten free penne pasta in a dairy free chicken and leek sauce. I topped it with some dairy free cheese and baked it in the oven for a melted crispy top. A perfect weeknight dinner served with some free from garlic bread and salad.
