I make this for breakfast when I have leftover banana that needs used up before next week’s food shopping arrives. I’m a fan of simple mug cake recipes like this that take a couple of minutes to put together and the same to cook.
I do find mug cake recipes tricky to develop as the ingredients are in such small quantities you have to get the balance just right. Lucky this recipe works time and again for me – my only warning is to keep an eye when your muffin is cooking as microwaves do differ quite a bit.
