I’ve had this recipe in my notebook for ages and finally got round to make it last weekend. It’s a really easy meal to serve if you have people round for a casual dinner. You can prep all the vegetables in the morning and then all you have to do is place them, with a few extra bits, into a casserole dish and bake in the oven.
I used sweet potatoes, onion, broccoli and tomatoes but you can add any other vegetables you have in the fridge and are wanting to use up.
