I haven’t made madeleines for ages – I had a recipe for them in my last cookbook which focused on gluten and dairy free baking. I actually haven’t got round to baking them again. I first had a proper French madeleine in a gluten free bakery years ago in Paris – it was amazing. They are really quick to make and also look really pretty.
To make them a little fancier, I’ve added a fresh raspberry into the middle of each madeleine. I picked up some dairy free white chocolate in the supermarket and decided this would work well in this recipe. The end of the madeleines are dipped in the white chocolate and then for extra decoration I’ve sprinkled on some crushed freeze dried raspberries.
