I stole this recipe from my friend who had a little Christmas dinner for a few friends the week before Christmas. He wanted to make soup as his starter and made a beautiful sweet potato and green lentil soup. It was more like a daal and pretty filling before a big Christmas dinner. At his request I’ve had a go at combining the beautiful flavours into a lighter version of his soup.
I feel like I’ve eaten a lot of soup recently, I’ve been struggling with a very long lasting cold (7 weeks now) that has gone into a chest infection. I’ve been trying to up my fruit and vegetable intake and have been gobbling down smoothie bowls and soup like nobody’s business. I’ve just mad ea big pot of roasted pepper and carrot soup – I’ll share the recipe soon.
