It’s my final Christmas recipe of the year and I thought I would end in style with this Christmas tart. I made this to take to a mini Christmas I was having with some friends in London.
It is kind of based on a lemon meringue pie but with a Christmas twist – a shortbread biscuit pie crust, filled with Christmas mincemeat topped with a cinnamon spiced meringue. Perfect served either hot or cold and leftovers can be stored in the fridge to finish the next day.
