Ingredients
- 1 large baking potato
- drizzle of olive oil
- salt and pepper for seasoning
- 40 g dairy free cheese grated
- 40 g pancetta cubed
- 1 tsp chives chopped
- 1 tbsp mayo double check it is dairy free
Instructions
- Place the pancetta in small pan and fry until golden, about 5 minutes
- Set aside
- Preheat the oven to 180 oC
- Slice the potato into 1/2cm slices and place on a baking sheet
- Drizzle with olive oil and season with salt and pepper
- Bake for 20 minutes
- Remove from the oven and top with the dairy free cheese and pancetta
- Bake for another 10 minutes
- Serve topped with a little blob of mayo and a sprinkle of chives
