These cookies are so easy to make it’s ridiculous. After a long weekend away and a busy day back at work I whipped up these cookies in ten minutes as an after dinner sweet treat. I’ve recently finished a recipe for a flourless gluten and dairy free chocolate cake for my new recipe book which got me wondering if you could make a flourless cookie.
I’ve turn to one of my favourite ingredients, peanut butter, as the base for this recipe. These have actually turned out to be one of my favourite cookies I’ve made, slightly crisp on the outside but still soft in the middle, perfect.
