Gingerbread always makes me think of being a child and visiting my Grandma. She always had a cake for us, usually either gingerbread or swiss roll. I used to love having a piece of sticky gingerbread with a little butter on the top and she would give me my tea in a fancy china teacup with a saucer.
Post diagnosis, I often hark back to the taste of that gingerbread. A lot of gingerbread recipes have treacle in them but that wasn’t the taste I was after so I had a go at making one without it. I reckon it is a pretty good replica.
