I wanted to make a cake for my mum for Mother’s Day but she isn’t a huge fan of chocolate or cakes with lots of frosting. I decided to make her a fruit based cake and picked to use orange. I’ve also used polenta which gave me the moist consistency I wanted for this cake. It has been a hit with the family today so I thought I would share the recipe with you.
